Curry Chickpeas and Quinoa

Ingredients
​
2 tbs. avocado oil
4 cups Fresh cooked chickpeas.
1 chopped onion
1 tbs. fresh garlic
1/2 cup red and green pepper
2 tbs. curry powder
tbs. cumin
tsp. salt and pepper
1 green onion stalk
1 tbs. red pepper flakes
2 cups coconut milk

Instructions
Sautee garlic and onions until soft, then add green onion, red and green peppers. add red pepper flakes, add curry powder and cumin until brown (don't let burn). Add coconut milk and chickpeas, salt and pepper and any of your favorite seasonings. let simmer to desired thickness.
Quinoa
1 cup of quinoa (let soak about an hour
1 cup of water
1/2 tsp salt
Add quinoa to boiling water, let simmer until water is gone.
